ეს სააღდგომო პასკა განსაკუთრებულ შექებას დაიმსახურებს _ რეცეპტი, რომელიც უნდა შეინახოთ

კარგი პასკის გამოსაცხობად მზადება რამოდენიმე ადრე იწყება, პირველ რიგში, პასკისათვის საჭირო ინგრედიენტები უნდა შევიძინოთ და მოვიმარაგოთ. როგორც იცით პასკა ფორმებში ცხვება, ასე რომ, წინასწარ მოგიწევთ ფორმების შეძენაზეც ზრუნვა.

სააღდგომო პასკა

გამზადებულ ფორმებს ჩავუფინოთ კაალკა. გამოცხობისას პასკა ფუვდება და სასურველია, რომ კალკა ფორმზე ოდნავ მაღალი იყოს. კალკას მოვუსვათ ცხიმი ( ზეთი) და დავდგათ სითბოში.

 

შემადგენლობა:

  • 1,4 კგ. შაქარი
  • 1 ჩ/ჭ წყალი
  • 300 გრ. ქიშმიში
  • 1,1 ლ. რძე
  • 2,5 კგ. ფქვილი
  • 50 გრ. საფუარი
  • 10 ც. კვერცხი
  • 2 შეკვრა მარგარინი
  • 150 გრ. კარაქი
  • 200 გრ. + ზეთი
  • 4 შეკვრა ვანილი (0,8 გრ.)
  • 1 ს/კ მუსკატის კაკალი, ილი, კარდამონი, ლიმონის ცედრა
  • მარილი

რეცეპტის მომზადების წესი:

1) 0,5 ჩ/ჭ შაქრის ფხვნილისგან და 1 ჩ/ჭ წყლისგან გავაკეთოთ სეროფი. ჩავყაროთ გარჩეული და კარგად გარეცხილი ქიშმიში (300გრ) და ვადუღოთ 5 წთ. მოდუღების შემდეგ ქიშმიში საწურზე დავაწყოთ, სეროფი კი შევინახოთ.

2) ღრმა ქვაბში ჩავასხათ 1 ლიტრი თბილი რძე, 1 ჩ/ჭ შაქარი, 100 გრ ფქვილი, 50 გრ საფუარი (საფუარი გავხსნათ 1 ჩაის ჭიქა რძეში) და ხელით კარგად გავადნოთ, ისე რომ საფუარის ბურთულები დაიშალოს. უნდა იყოს არაჟანის სისქის. დავაფაროთ პოლიეთილენი, დავდგათ თბილ ადგილზე და ვაცალოთ ამოსვლა (დაახლოებით 20 წთ დასჭირდება).

3) ამასობაში მოვზილოთ ცომი. წინასწარ კვერცხის ცილები უნდა შევდგათ საყინულეში, ოღონდ არ გავყინოთ. 10 კვ. გულითა და 0,5 კგ შაქრის ფხვნილით გავაკეთოთ გოგლი-მოგლი.

4) ცალკე ჯამში აცთქვიფოთ ცილები. თქვების დაწყებისას დავამატოთ 1 პატარა კოვზის პირი ლიმონის მჟავა ან მარილი და ვთქვიფოთ სანამ ღრუბელს არ მივიღებთ. დავუმატოთ 500 გრ. შაქარი და გოგლი-მოგლი. გავაგრძელოთ თქვეფა. შევურიოთ წინასწარ სითბოში გამდნარი 2 შეკვრა მარგარინი, 150 გრ კარქი, 200 გრ ზეთი, საფუარიანი ცომი (თავიდან რომ მოვამზადეთ) და ხელით სათუთად ვურიოთ. დავუმატოთ 4 ც. ვანილი და ქიშმიში (300 გრ. სეროფში რომ მოვამზადეთ). პარალელურად ვურევთ. დავუმატოთ 1 ს/კ მუსკატის კაკალი, 1 ს/კ ილი, 1ს/კ კარდამონი, 1 ს/კ ლიმონის ცედრა და ცოტა მარილი.

5) ცომი უნდა იზილებოდეს სითბოში. ზელვის დროს ხელი უნდა დავისველოთ ზეთში. ფქვილი დავაცრათ იმდენი რომ ფაფუკი ცომი გამოვიდეს. დაახლოებით 2-2,5 კგ. ეს მასალა დავდოთ თბილად და როცა ამოვა, ჩავზილოთ. ეს უნდა მოხდეს 2-ჯერ. შემდეგ ფორმებში გავანაწილოთ. ხელები ყოველთვის ზეთით უნდა დავისველოთ და ისე შევეხოთ.

6) ცომი გადავანაწილოთ საცხობ ფორმებში, თითო ფორმაში მოათავსეთ იმდენი ცომი, რომ ფორმის მოცულობის 50 პროცენტზე ოდნავ მეტი შეავსოს. დავაცადოთ ფორმაში აფუება, ზემოდან მოვუსვათ სეროფი (რომელიც თავიდან მოვადუღეთ) და კვერცხის გული, რომ არ დასკდეს.

7) დაბოლოს, შევდოთ წინასწარ გახურებულ ღუმელში და ვაცხოთ 150 გრადუსზე. კარგად რომ ამოვა, ოდნავ დავუწიოთ ტემპერატურას. ბოლოს ხის ჩხირით გავსინჯოთ. თუ ჩხირს ცომი არ ამოჰყვა, პასკა მზად არის! გამომცხვარ პასკას მოვაყაროთ შაქრის პუდრა.
